Where high quality food and casual vibes meet! Based out of Farmington, we're a wood-fired grill food truck, offering a spin on the classic Mediterranean Style Street Food. We've paired up with other local food vendors and breweries to bring the great region of Western Maine a fun and original food experience!
WHO WE ARE
Chef and Proprietor, Niko Regas
Established in 2019, we started our journey as an independent business and restaurant owners with one goal in mind: cook great food! But the journey began long before 2019. My passion ignited at five years old when my father handed me the grill fork at the barbecue and said, "Don't let it burn." A lot has happened since then.. Working from whole in the wall restaurants to working for critically acclaimed Chef Jean-Georges Vongerichten. My last adventure was with Emilitsa a multiple James Beard nominated restaurant and a New York Times best of 36 Hours Travel segment in Portland Maine. After working ten+ years with Emilitsa I fell in love with Farmington Maine and made the move. With over 25 years of experience in a restaurant, it was my dream to one day run my own establishment. Moving to Farmington allowed our chance to focus on those ambitions. At our original location, we hoped to provide the community with high quality food in a unique atmosphere. After the pandemic delayed some of those plans, we officially reopened in February of 2021, but this time: MOBILE and have been trucking ever since! Thank you Western Maine for helping us to become who we are today!

With over 25+ years experience, in a variety of different establishments from Maine to Minnesota, Chef Niko brings to Western and Central Maine some of his favorite cuisines. Varying from his take on the classic Greek Gyro to locally inspired dishes to to completely unique creations. There is an ever changing selection, all wrapped up in his signature taste.
